Clean Eating: Roasted fries

When first beginning to eat clean the first thing people give up are usually fries or chips. And they should. It was one of the first things that I gave up when I decided I wanted to get back into shape. Fries taste so good! One of my favorite junk foods of all time is poutine: Hot freshly fried fries with stringy mozzarella cheese curd and hot salty gravy poured on top. Also, to open a bag of potato chips is heaven. That salty crunch! We all crave it.

But it’s not the potato that’s unhealthy. It’s the processing we do to the potato that makes fries or chips or something you should not eat if you want a flat tummy!

Potatoes themselves are fat, sodium and cholesterol free. Potato skin are high in fiber, and contain 45% of the daily value for vitamin C. The skin contains more potassium then even bananas, spinach or broccoli.

Don’t be scared of potatoes. They are grown in the ground and good for you. Eat them. But mind the way you cook them. Prepare them in a healthy way, and your potatoes can be delicious as well as good for keeping you trim and slim.

My favorite recipe was adopted from one of my new favorite YouTube channels called “Dimitra’s Dishes.” In her video about lemony greek potatoes, she gives great instruction on how to make great roasted potatoes, or fries, homemade! The benefit to homemade food is that you can control the amount of oil and seasonings. It’s cheaper and in the long run it’s healthier. Check out her great video:

 

 

I preheat my oven to 425°. The first thing I do is half peel the clean potatoes. I use yellow fleshed potatoes from the farmers market. I cut them into shapes like fries:

I also add a lot of seasonings but I use the salt free kind. these are heavy and herbs and dried vegetables, onion and garlic powders. I also use fresh oregano. I don’t use half a cup of oil. I use about a tablespoon of canola will and a tablespoon of olive oil. And the squeeze of a whole lemon or a whole lime.

I put these into the oven, covered tight with foil, at 425 degrees for half an hour. I take them out and turn them a bit, if it’s too dry at this point add little more oil or more lemon.

Then put them back in the oven for another half an hour uncovered. I turn the heat down at this point to 400°

These fries are so good. I eat them with Maille Dijon mustard or ketchup.
