A marinated chickpea salad is a healthy and delicious option. It’s very low in fat, high in fiber, packed with vitamins and this salad is plant-based. Perfect cozy night at home is good food, dateline with Keith Morrison and cold sparkling water. Last night I had Keith Morrison, but didn’t know what to make:

But I was home and thought I should eat clean. The solution was marinated chickpea salad.
I diced two stalks of celery & two carrots, rinsed and drained one can of chickpeas and marinated the mix with half a lemon, balsamic vinegar, extra-virgin olive oil and salt and pepper.
Chickpeas are high in folate and iron, important for blood health, cell growth and metaboloism. The fibre makes it a good clean food to eat if you’re interested in losing fat.
One can chickpeas, rinsed and drained
Two carrots, diced
Two stalks of celery, diced
1 tablespoon fresh lemon juice
1 teaspoon olive oil
1 teaspoon balsamic vinegar, aged
Salt and pepper to taste
Mix ingredients. Cover. Let stand for at least one hour to blend flavors if you can wait. This salad will keep in the fridge for up to four days.
